SUN DRIED CHERRY TOMATOES RECIPE



Okay my recipe is actually in the oven - not half as cool as the pic above - but same difference right?  I had to use up the rest of my cherry tomatoes - my plants actually bore fruit this year - imagine the shock!  So came up with the brilliant idea of making sun dried cherry tomatoes, I am doing the same with the mystery peppers I grew (no idea what kind of peppers they are as I bought the plant from an Asian man who didn't speak english well) (something I do a lot - buy mystery things from non english speaking people hmmmm).  Anyway the peppers dont appear poisonous so drying those as well along with the remains of my herbs that made it through - mostly the stubborn mint and rosemary.....


Organic Sun Dried Cherry Tomatoes Recipe

  • 2-4 cups of cherry tomatoes
  • 1-2 tbsp olive oil
  • unrefined sea salt to taste
  • basil, Italian seasoning (optional)
  1. Preheat oven to 200 F. If using a dehydrator, set temperature at 140 F.
  2. Slice tomatoes in half and place in bowl.
  3. Add olive oil, salt and seasoning of choice
  4. Line a cookie sheet with parchment paper and place the tomatoes cut side up onto the cookie sheet. If using a dehydrator, simply place on trays cut side up.
  5. Bake anywhere from 4-8 hours. They are done when you allow one to cool and they are dried all the way through. Start checking after 2 hours to see if they are done.
  6. Store in an air tight container in a cool dry place.

  1. ooooh! Thanks for this recipe, I have got to try it. I have seen jars of this being sold in oil in supermarkets for expensive prices and wanted to try them but hey now I can make them. Thanks!
